Servings: 12 Muffins
Ingredients:
- 1 cup almond flour
- ½ cup coconut flour
- 1 t baking soda
- 3 eggs- whisked
- 2 bananas- mashed
- 1 cup blueberries
- ½ cup maple syrup
- 1 t salt
- 2 T coconut oil- melted
- Extra coconut oil for greasing
Directions:
- Preheat oven to 350.
- Grease 12-Cup muffin pan with extra coconut oil.
- In a large bowl, mix almond flour, coconut flour and baking soda. Break up any clumps in your flour.
- Add whisked eggs, mashed bananas, blueberries, maple syrup and salt. Mix well.
- Add melted coconut oil and mix. Immediately spoon mixture into muffin cups.
- Bake muffins for 30 minutes on 350. Done!
